Ingredients
- 15oz can pumpkin puree
- 2 eggs
- 2/3 cup packed brown sugar
- 2 tsp vanilla
- 1 1/4 cup milk
- 4 1/2 t pumpkin pie spice
- 1 tsp salt
- 4 cups old fashioned oats
- 1 T baking powder
- 1 cup chopped pecans
- 1 cup cranberries (mine were frozen)
Instructions
- Preheat oven to 350 degrees.
- Spray an 9x13 baking dish with non stick cooking spray.
- In a large bowl, combine all ingredients.
- Pour the oatmeal mixture into the dish and spread evenly.
- Bake in preheated oven for 30-35 minutes until golden and let sit 5 minutes before serving.
